Apollo Bar and Kantine and Nicole Coson are pleased present “A Movable Feast” an eight course, spice laced, tasting menu inspired by the Silk Road, an ancient network of trade routes that has defined so many cultures and cuisines. The Silk Road was for centuries critical to the cultural interaction between the East and West. Tethering Asia to the Middle East and southern Europe. Each course focuses on a particular ingredient whose heritage and history can be traced back along this route.
Shaped like a mythical snake with multiple heads and tails, the Silk Road has taken many forms, rising in and disappearing like a mirage in the Taklamakan desert. It has defined so many culture’s cuisines by way of culinary osmosis and its legacy lives on in our modern palate. Borrowed culture is not a new concept and authenticity should not be a restrictive or limiting system by which we judge our experience of food. Humans have a relationship with food that goes beyond survival or pleasure, it is what we were, who we have become and where we may be headed.
Each diner will be receiving a copy of Food Stories: Silk Road, a collaboration between Nicole Coson and Keshav Anand. The book is a compilation of recipes, photography, drawings and essays by a culturally and professionally diverse group of creatives living and working under the legacy of these cultural exchanges. Tangentially exploring the influence of the Silk Road on contemporary cuisine and life, Food Stories touches on diverse aspects of the trade route’s impact, spanning notions of provenance, personal perspectives, intersected histories, recipes, visual culture, and more.
About the Artist: Nicole Coson is an visual artist currently based in London and born in the Philippines to Chinese Parents. Her practice engages with ideas of belonging, cultural authenticity and identity politics.
